Chicken Caesar Salad

There is nothing like Chicken Caesar salad!

Chicken Caesar Salad is a salad of depth and complexity. The crisp and refreshing lettuce, typically romaine, provides a crispy and crunchy base that contrasts with the tender and juicy chicken, grilled or roasted, and is seasoned with a blend of herbs and spices. The creamy Caesar dressing, made with Parmesan cheese, garlic, and (typically) anchovy paste, adds a rich and tangy flavor to the salad. The dressing also adds a smooth, velvety texture that complements the crunchy lettuce and tender chicken.

Finally, the salad is often topped with croutons, which add a crispy and crunchy texture to the dish. The croutons also provide a savory, salty flavor that complements the other ingredients. This combination of fresh and flavorful ingredients creates a satisfying and delicious meal.


Chicken Caesar Salad


Ingredients


Romaine Heart - 1

Plum Tomato - 1

Fresh grated Parmesan - .5 oz

Lemon - 1

Mayonnaise - 3 oz

Worcestershire Sauce - 1.5 oz

Boneless, skinless Chicken breasts - 12 oz

Ciabatta roll (or hearty white bread)

Garlic - 4 cloves

Kosher Salt & ground Pepper

Directions


PREP

Finely chop 2 teaspoons of garlic. Cut lettuce in half lengthwise, keeping leaves intact at the core. Cut tomato into ½-inch pieces. Finely grate Parmesan. Finely grate ½ teaspoon lemon zest and squeeze 1 teaspoon juice into a small bowl. Cut the remaining lemon into wedges.


Split ciabatta roll. Drizzle oil over the lettuce and loosely chunk the bread. Season with a pinch each of salt and pepper. Add to grill and cook until just charred, 1-2 minutes. Cut or tear rolls into cubes.


DRESSING

Combine and whisk lemon zest and juice; add chopped garlic, mayo, and 1 teaspoon Worcestershire. Season to taste with salt and pepper.


GRILL

Preheat the grill or pan over high. Pat chicken dry. Brush each side with a thin layer of dressing (about ½ teaspoon per side). Add to grill and cook until cooked through and charred, 5-7 minutes per side. Transfer to cutting board to rest.


Stir in half of the Parmesan and 2 tablespoons water to the remaining dressing.


Cut chicken into strips and place alongside lettuce, tomatoes, and croutons. Drizzle dressing over the top and garnish with remaining Parmesan and lemon wedges. Enjoy!
